Wyoming Whiskey Double Cask Limited Edition starts as a standard 5 year old straight bourbon, which is then finished in ex-Pedro Ximenez sherry that are decades old according to the company. First released in 2017 and released annually thereafter, the latest limited edition release shares the same age, proof, and finishing barrel type as previous editions.
This is a bright, lively whiskey that morphs throughout the sip. It starts with a grassy, apple pie/green apple aroma that has an herbal undertone. It transitions towards sweet on the palate, with green grape, dried cherry, and raisin with a hint of vanilla custard. Finally, it takes a turn into rich, deeper flavors with dark fruits, plum, and raisin with a long cinnamon-spice finish topping things off.
This is an unusual whiskey, and it took me longer than usual to dial it in. It has a familiar Wyoming Whiskey apple-y herbal undertone on the nose, but transitions through a range of flavors from there on out. Ultimately it’s a fun play on sherry cask finishing, as Wyoming Whiskey lays their own distinctive base and amplifies what I enjoy about Wyoming Whiskey.
