Silvery and clear. Dry, delicate and mildly creamy in the initial sniffings; time in the glass allows other scents to emerge, especially wet grass, new leather and a fresh-off-the-still flowery perfume. Palate entry is stone-dry and minerally; at midpalate, the flavor turns grainy sweet and a touch smoky. The aftertaste shows a bit of charcoal smokiness. So savory, maybe other Mexican distillers should begin thinking “vodka.”
