This is Matchbook Distillery's take on the American classic. Matchbook is committed to producing the highest quality spirits using innovation and history to guide their techniques. Fermented from 61% NY grown, Organic Dent, 22% NY grown soft organic winter wheat, 12% NY grown malted barley and 5% NY Grown organic oat. After double distillation it's aged in 53 gallon char #2 Kelvin barrels with 36 month air dried staves. Rich and full of sweet grainy corn, balanced by a savory spice and subtle earthy character.
