The small facility located in Greenport is devoted to sustainable agriculture and returning to a farmer driven distillation cycle, where distillation is a means of preserving energy rather than extracting it. One of MDC's most innovative and approachable offerings, the now sold out Day Trip is a revelation for lovers of aperitifs. Making use of a nearly discarded batch of 2 tons of strawberries fermented by a local winemaker, Matchbook distilled nearly 100 gallons of strawberry eau-de-vie.
Using that base and pungent mixture of nettle, quassia, jasmine, rose, and nutmeg, the fruit macerated for a few months and the strawberry wine was blended back in before filtering, sweetening and bottling. The slightly bitter aperitif is an absolute dream to play with in a spritz and extremely refreshing with a splash of soda or tonic. Unfortunately, when these cases are sold, we will never see this one again.
